Tallarin con Pollo is Peru’s take on spaghetti with meat sauce. Bone-in chicken thighs simmered in tomato sauce for 60 minutes. Very similar to Italy’s bolognese, with 60% ground carrots and only 40% tomato. Often served side-by-side with Papas a la Huancaina.

Ayer probe Tallarin con Pollo. Me hizo viajar al pasado a los dias de mi abuela. QUE AUTENTICO. Este plato proviene de Italia, de la salsa “Ragu” la cual contiene tomates y zanahorias. Actualmente es un Ragu de Zanahorias como se hace en Italia, con mas zanahorias que tomates. En USA, el ragu se hace solamente de tomates. Tambien probe el Pollo Tipakay, un plato Chino de Lima, que nunca falta. Son chicharrones de pollo en chun~o, con salsa agridulce.

Yesterday I tried Tagliatelle con Pollo. It made me travel back in time to my grandmother's days. HOW AUTHENTIC. This dish comes from Italy, from the "Ragu" sauce which contains tomatoes and carrots. Currently it is a Carrot Ragu as it is made in Italy, with more carrots than tomatoes. In the USA, ragu is made only from tomatoes. I also tried Chicken Tipakay, a Chinese dish from Lima, which is never lacking. They are chicken cracklings in chun~o, with sweet and sour sauce.
